I love blueberry cornbread! I usually leave out the lemon and play around with other flavorings. A bit of almond is very complementary as is maple. Grated orange is nice with almond. I prefer a square pan for "chunks" instead of slices. I remove from the pan and then slice. I'm not sure why. If you do, It's important not to "play" with this once it is out of the pan because "fault" lines develop along the blueberry lines and can cause cracks. If you have never made blueberry cornbread, NOW IS YOUR CHANCE TO MAKE IT! You will not be disappointed.
