Leave it to me to nitpick, but what is the exact butter amount to be used. 6T is 3 oz., not 3/4 cup (6 oz.). Which is it? We're having a pitch-in at work Tuesday, and I thought I'd bring this instead of the sweet potato pone (very complicated recipe) that I usually take.

Hi Cathy

I was wondering if I could add some more sweeteners (sugar, more maple syrup) to the mix because I like my sweet potato dish real sweet, that 1/4 cup of maple syrup is not enough to sweeten my 4 pounds of potatoes for me. It just want be sweet enough. Thank You.

Wanna know a secret?

You can save yourself a fair bit of time and bother if instead of baking the sweet potatoes you cook them in the butter/cream mixture instead. This is what I do for thanksgivings.

I slice the potatoes really thin and cook them in the mashing liquid until they are soft enough to mash. Takes about 15-20 minutes on the stove top.

Cooking in the mashing liquid produces a creamier sweet potato. It also allows you to introduce flavors. Last year I steeped the cream with a little cilantro and garlic. This year I added a little thyme to the cream.

Oh and BTW a fabulous addition to this is some chipotle. One or two finely chopped and their sauce is incredible.
