I made this recipe twice. First time I could not find coconut pudding so substituted vanilla. I think that made it almost too sweet. The pineapple ring looks nice but makes it difficult to eat. Adding the coconut and chopped macadamias to the filling resulted in too many textures in my opinion. Second time around, I found coconut pudding and skipped the coconut and chopped macadamias in the filling, saving them for the garnish. I also used crushed pineapple instead of the ring. Everyone raved about it!

We made these for my daughters award ceremony. I did a little Hawaiian theme and it was nice to have dessert premade waiting in the fridge while I focused on other party things. They were delicious.

We had a Hawaiian themed grad party for my daughter and I made several batches of these and everyone loved them. So perfect. Loved the layers.
