The meat HAS to rest for best results, &#038; you want to eat your tacos while the tortillas are WARM. They cool so fast after cooking, unless you keep them in a warmed oven. I cook mine right after the steak is sliced, then eat immediately. I&#039;m going to try this recipe  I love chimichurri!]]></description>
