This Dill pickle Soup recipe has been a standing favourite in my home for at least a decade. I don&#039;t think I have ever reviewed it but I will tell you all that it is simple, delicious and easily made plant based by omitting the dairy milk for a plant based variety, or simply blend a bit of the potato and broth and reincorporate into the soup. Delicious!!!]]></description>

					<description><![CDATA[I had never made pickle soup before and this recipe was a great jumping off point!  Instead of just carrots I did a full mirepoix and I added a clove of garlic plus a bay leaf and peppercorns.  I also reduced the butter to a pat plus a glug of evoo.

I had spicy pickles in my fridge so I just used those and omitted the cayenne, I also increased the diced pickle to one and a half cups and added it in halfway through cooking the potatoes.  My brine was quite salty so I reduced the brine to one cup and omited salt.  So overall though I kinda changed it up a bit this was a great recipe to use!]]></description>
