I’ve made this about 6 times now. It’s beautiful! (Although I add about 1/4 cup coriander leaves, 2 Kaffir Lime leaves and double the birdseye chillies.)
I like to serve it with some red rice and an Asian style salad.

This is an awesome recipe! The first time I made it, I forgot to add the peanut butter. It was so wonderful without it. I had soup for several servings, left over, so I froze what I didn’t eat for later! Now I am making it again but with chicken instead of pork. I think it will be a winner too. My meat and potatoes husband loved it too which was a real shocker.
