These beans can also be found at the Lompoc Bean Company in California (they have a website). That company also sells Pinquitos. They are in the region of Santa Maria, home of the famous tri-tip, and Pinquitos are kind of famous also. When I visited the Lompoc Bean Company, the lady behind the counter mentioned that these yellow beans (in your recipe) are sort of nostalgic and "old school" for many Hispanics in the area. Most people just think of regular pinto beans or if they want to be all trendy gourmet and healthy they might go with something like black beans and sweet potatoes. She told me that her grandmother's recipe for these yellow beans is very simple, just a little onion and basic seasonings. Anyway, I didn't have any Herdez salsa verde on hand, but I did can some bumper crops of tomatillos into a verde sauce. Gotta use it up!

I found your recipe several years ago.
These are still the best beans we've ever tasted!!
Living in South Central Texas they are easy to find.
We always have Herdez salsa verde and cilantro on hand to be able to whip up different Mexican foods.

The only thing we do differently is to cook them on the stovetop.
Thanks for sharing this recipe!!

Don't you just LOVE "Better Than Bouillon"!! After I found a pinto bean recipe that said Better Than Bouillon is the "secret ingredient" to making the BEST pintos ~ I use it, and all flavors instead of the cubes or granules! Though I do keep some granules on hand for generic uses. Adding to boiling water and such! Making this recipe today for the first time ~with Better Than Bouillon! Can't wait to try it
