<h2><strong>My Take on Western Carolina BBQ Sauce</strong></h2>
<p>Every time I try to follow the rules with<strong> Carolina sauce</strong>, I end up smudging them a little. This <strong>Western Carolina</strong> one was no different.</p>
<p>I kept the <strong>vinegar</strong> front and center and used ketchup to give it that <strong>Lexington-style nudge</strong> without turning it into something thick or sugary. It’s still a true <strong>Carolina “mop” or “dip” sauce</strong>, just not a museum piece of the old recipes.</p>
<p>I kept the parts of the <strong>classic</strong> that matter, then made it the way I prefer to eat it. A little brown sugar, heat from the pepper flakes, and a<strong> vinegar-tomato balance</strong> that complements a lot more things than pulled pork. Ribs, smoked chicken, grilled sausages, roasted potatoes. This is the sauce that ends up on whatever’s closest.</p>

<p>The list of<strong> ingredients</strong> I’ve settled on after consuming years of BBQ reading, streaming, and eating.</p>

<li><strong>Apple cider vinegar</strong> – The Carolina identity without trying.</li>
<li><strong>White distilled vinegar</strong> – Adds the edge ACV can’t do alone.</li>
<li><strong>Water</strong> – Reins the vinegar in so it doesn’t take your head off.</li>
<li><strong>Brown sugar</strong> – Just enough to keep the sauce from going feral.</li>
<li><strong>Ketchup</strong> – The move that shifts it into Lexington territory.</li>
<li><strong>Red pepper flakes</strong> – Honest heat, <em>my favorite kind</em>.</li>
<li><strong>Kosher salt</strong> – Keeps the vinegar from tasting dull.</li>
<li><strong>Black pepper</strong> – That last little push of spice.</li>

<h2><strong>How to Make Western Carolina BBQ Sauce</strong></h2>

Grab a medium saucepan and pour in the apple cider vinegar, white vinegar, water, brown sugar, ketchup, red pepper flakes, salt, and black pepper. Whisk until the sugar starts to dissolve and everything looks blended.</li>

Set it over medium heat and bring it to a gentle simmer. Stir occasionally so the sugar melts evenly and nothing sticks to the bottom. Keep it from boiling since this sauce should stay light and pourable, not thick like Kansas City style.</li>

After about 10 to 15 minutes, remove it from the heat and let it cool. The vinegar will calm down as it rests, and the flavors blend into that tangy-sweet balance Western Carolina is known for.</li>

Close, but I rarely do things by the book. Traditional Lexington “dip” is mostly vinegar, a little ketchup, sugar, and pepper. Mine stays true to that base but adds balance and warmth without going off the rails into sweet or thick territory.</li>

That’s how it should be. Western Carolina sauce isn’t meant to coat like Kansas City or Memphis-style BBQ. It’s a “mop” sauce that seeps into the meat, not soaks the surface.</li>

<h2><strong>My Take on Carolina Vinegar BBQ Sauce</strong></h2>
<p><strong>BBQ sauce</strong> in the Carolinas is personal. Regional. Territorial. And very much based in tradition. Honestly, eating my way through all of it brought me to one conclusion: <em>vinegar runs the show out there</em>.</p>
<p><strong>East Carolina vinegar sauce</strong> is thin and sharp, all apple cider vinegar, red pepper, and attitude. No butter, no thickener, barely a hint of sweet. It’s tangy, sharp, and peppery, with very little sweetness. It’s good, but for me it lacks the mouthfeel I crave in a sauce.</p>
<p>Yes, this version might trigger a few people, but <strong>I’m not here to just regurgitate what already exists in the wild</strong>. Carolina sauce deserves evolution, not repetition.</p>
<p>My riff is what I call <strong>Carolina-style brown sugar vinegar BBQ sauce</strong>, still vinegar-based but richer from butter, molasses, Worcestershire, and brown sugar. If this sounds like a soft rebellion against the purists, <em>you&#8217;re right</em>. Technically it’s a hybrid between East Carolina and Lexington (Piedmont) style, where sweetness starts to sneak in. I thicken it with a bit of cornstarch so it clings to the meat, which tradition would hate, but I love!</p>
<p>Either way, it’s <strong>ridiculously good</strong> on pulled pork, ribs, or chicken. I make it often, and at some point someone always says, “Can we just put this on everything?” <em>Yes. We can</em>.</p>
<h2><strong>Why I Love This Recipe</strong></h2>

<li><strong>Butter</strong>. Butter is the answer.</li>
<li><strong>Clings</strong> to meat instead of running off.</li>
<li>It’s <strong>traditional</strong>, but <strong>misbehaved</strong>. <em>Just like me</em>.</li>

<p>I built this <strong>Carolina-style sauce</strong> on vinegar, a liitle attitude, and Southern energy, but softened it just enough with butter and molasses. It’s the perfect balance of masculine and feminine harmony, all bite, with soft edges and charm.</p>

<h2><strong>How to Make Carolina-Style Brown Sugar Vinegar BBQ Sauce</strong></h2>

Grab a medium saucepan and set it over medium heat. Add the cider vinegar, molasses, dry mustard, butter, cayenne, Worcestershire, and brown sugar. Give it a few stirs as it warms so the butter melts evenly and the sugar dissolves instead of sticking to the bottom.</li>
<li><strong>Step Two (make the slurry):</strong><br />
Whisk the cornstarch with a little cold water in a small bowl. Slowly pour it into the saucepan while whisking. The sauce will start to pull together and thicken slightly, but it should still stay loose and pourable. That’s exactly what you want.</li>

<li><strong>Is this an authentic Carolina BBQ sauce?</strong><br />
Not exactly, it&#8217;s a riff. Traditional East Carolina sauce is straight vinegar, pepper, and salt with zero butter or sugar. Mine keeps the vinegar but goes richer with brown sugar, molasses, and butter. The summer season is slowly slipping away with less than a month left before the season officially closes. I am not quite ready for sweaters or anything pumpkin. I still want to soak up a little more good weather before the rain in the Pacific Northwest settles into our lives.</p>
<p>The upcoming weekend in the U.S. is kind of the last, official hurrah of summer as we celebrate Labor Day. While many children have already returned to school, many (including mine) don&#8217;t go back until after the holiday.</p>
<p>I thought it would be fun to post some yummy, homemade barbecue sauces from around the web you can use on all your grilled masterpieces. I hope you get to try a few favorites before your grill is put away for the winter.</p>

We are big barbecue lovers over here, ribs, pulled pork and brisket make for an amazing meal. But the sauce has to be right. <em>Like perfection</em>. Sometimes I crave my tangy-vinegar based&#160;<a href="https://noblepig.com/2010/01/east-carolina-barbeque-sauce-for-pulled-pork/">Eastern Carolina Barbecue Sauce</a>.&#160;But lately I&#8217;ve been wanting something sweet with a little bit of smoke on the side.</p>
<p>Kansas City Style Barbecue Sauce is known for its balanced sweet-smoky-spicy flavor. It can be hard to achieve since the sweetness can easily overpower the other flavors. However, I&#8217;ve been playing and tweaking and I think I&#8217;ve finally gotten it. Practice makes perfect!</p>
<p>The sauce is thick and somewhat dark brown. It&#8217;s powerful and ornery with lots of attitude. I love this sauce on pulled pork and all kinds of other barbecue.</p>

I have been spending a lot of time learning about all the different regional styles of barbecue, it&#8217;s fascinating and it&#8217;s not just about the sauce.</p>
<p>There are rubs, the way meat is cut and how it&#8217;s smoked. I hope I get to visit all the different barbecue regions one day and figure out which one I like best. For now I will stick with this sauce and see where it takes me. Next stop&#8230;<em>St. Louis style.<br />

<h3>Directions</h3>
    <div class="instructions"><ul >
	<li class="instruction">Place raisins in a small bowl and cover with 1 cup boiling water. Let sit for 15 minutes while they plump up. Drain.</li>
<li class="instruction">In a large saucepan, saute onion in 1 Tablespoon olive oil until soft, about 5 minutes. Add garlic and continue sauteing for about 30 seconds more or until fragrant.</li>
<li class="instruction">Place drained raisins, onion-garlic mixture, balsamic vinegar and remaining one Tablespoon olive oil into blender. Puree until smooth.</li>
<li class="instruction">In the same saucepan you sauteed onions in (you don't have to clean it), add pureed mixture and the rest of all the ingredients. Bring to a simmer over low-medium heat and reduce by half, leaving sauce uncovered; about 30 minutes.</li>
<li class="instruction">Serve with your favorite barbecue. I have found sauce tastes best when it has sat for a day and the flavors have melded together. Keep refrigerated.</li>

<p>What a fun brunch it would be to serve these threaded ribbons of meat&#8230;wow.&#160; I think you could also grill these, but mine were done in the oven and basted with this wonderful barbecue sauce.</p>
<p>Putting all this meat on stick and essentially turning into crispy-candy-like fun made me pine for the county fair, where food on a stick reigns supreme!&#160; Makes me miss summer just thinking about it. Sigh.</p>
<p>Anyway, about the sauce. I know I&#8217;ve mentioned before about my favorite jams.&#160; They are made by <a href="http://www.republicof{5396afcf7ebcb011d88226d96591fa60d0bb5a6cac0179c8121d60c005c366a8}20jam.com" target="_blank">Republic of Jam</a>, which just so happens to be right next door to our tasting room in Carlton, Oregon.&#160; So, how lucky am I to have&#160;this amazing food product made only 100 feet away.&#160; Let&#8217;s just say, &#160;I consume a lot of jam, as there is always some new, incredible flavor coming out of their kitchen.&#160; To make a long story short, I used their Marionberry jam to make this sauce, with a dash of cinnamon and a whole-lot-a-barbecue sauce. Funny thing is,&#160;Republic of Jam makes&#160;a Marionberry-Cinnamon&#160;flavor, but I happened to be out so I just added cinnamon to the sauce. It was perfect&#8230;perfect&#8230;perfect.&#160; Lucky for you,&#160;RoJ ships their jams everywhere, or just use&#160;what you already have, lots of flavors will work beautifully with this recipe.</p>
<p>I would serve these for brunch with a side of some serious crunchy potatoes.&#160; I know it would be fantastic!!</p>

<p><strong>Bacon, Sausage &amp; Ham Breakfast Kebabs with Marionberry-Cinnamon Barbecue Sauce<br />
</strong><em>Inspired from Cuisine at Home<br />
Makes 6 kebabs and 1-1/4 cup sauce</p>
<p></em>For the sauce:<br />
1 cup purchased barbecue sauce<br />
4 Tablespoons Marionberry jam (I used Republic of Jam Marionberry)<br />
1/4 teaspoon ground cinnamon</p>
<p>For the kebabs:<br />
6 pork sausage links, cut into 1&#8243; pieces (I used Johnsonville&#8217;s Vermont Maple Syrup Sausage links)<br />
6 strips think-sliced bacon (I used Carlton Farms bacon)<br />
8 oz ham steak, cut into 1&#8243; pieces</p>
<p>Preheat oven to 350<sup>o </sup>F; line a baking sheet with foil and top with a cooling rack.&#160; Spray rack with nonstick spray.</p>
<p>Combine barbecue sauce, jam and cinnamon in a small saucepan over medium heat.&#160; Simmer until jam melts and sauce is warm; 2 minutes.</p>
<p>Thread sausage pieces, bacon and ham pieces loosely onto six 10&#8243; long skewers.&#160; Brush kebabs with sauce and transfer to the prepared baking sheet.</p>
<p>Roast kebabs until all meats are browned and cooked through, about 30 minutes.&#160; Baste and turn the skewers every 10 minutes to ensure even cooking.&#160; Remove from oven and serve immediately.</p>

<p>With Father&#8217;s Day coming up it was time to consider what barbecue sauce we are going to use to slather-up the &#8220;man food&#8221;.  This one is definitely in the running!!  This was also a great way to reuse my jars&#8230;I love them.</p>
<p>Anyway, this sauce is pretty awesome and it keeps a definite taste of Dr. Pepper&#8230;I love that.  The ancho chile powder also adds a nice depth of flavor.</p>
<p>Make this for the man in your life&#8230;.he will love it.  <em>Oh yeah&#8230;the women will like it too.</em></p>
<p><strong>Dr. Pepper Barbecue Sauce<br />
</strong><em><br />
</em><br />
4 Tablespoons unsalted butter<br />
4 cloves garlic, minced<br />
1 large yellow onion, minced<br />
1 cup ketchup<br />
1/2 cup apple cider vinegar<br />
1/2 cup light brown sugar<br />
1/3 cup Worcestershire sauce<br />
3 Tablespoons tomato paste<br />
2 teaspoons ancho chile powder<br />
1 teaspoon kosher salt<br />
1 teaspoon ground white pepper<br />
1 (12 ounce) can Dr. Pepper soda</p>
<p>Heat butter in a 4 quart saucepan over medium-high heat.  Add garlic and onions; cook until soft, 4-6 minutes.  Add ketchup, vinegar, sugar, Worcestershire, paste, chile, salt and pepper and soda; bring to a simmer.  Cook until thickened, about 30 minutes.</p>
