					<description><![CDATA[So, it was Cinco de Mayo 2023.  We had an event to attend at dinner time, so I wanted something easy to make that could hold while we were out.  As I gathered my pantry items, I had green enchilada sauce (our preference) and sitting right next to the can, was a 4 oz can of diced green chilis.  The chilis jumped into my hand, along with the enchilada sauce.   I added them at the same time I added the sauce.  I prepared the recipe up to the point of adding in the cheese and tortillas. All it would need was to be heated back up and and the cheese and tortilla strips.  The happy husband tasted the mix while it was warming and loved it.  He suggested just using the mixture for a filling for burritos, along with the cheese.  So, that is what we did.  We have enough leftover mixture for a small enchilada casserole in a few days.  I will roll up the enchiladas, cover with green chilis and green enchiladas sauce, top with cheese and pop into the oven to warm through.  What an incredibly versatile recipe!
