This delicious Cheesy Taco Skillet whips up in no time and has instantly become one of my family’s favorite, dinner dishes. The special homemade seasoning mix gives this recipe a flavorful punch you’re going to love.
I am so excited to share this recipe for Cheesy Taco Skillet from my friend’s Chad and Donna’s new beautiful cookbook, The Simple Kitchen. If you are looking for new dinner ideas with gorgeous photos of simple and delicious recipes, look no further.
And who knew such a quick and easy stove top recipe could taste so good? The secret is the homemade seasoning mix. I will never buy store-bought taco seasoning again. This one is my new favorite. It just really tastes authentic and is not full of sodium.
This book also has a recipe for a Tuscan-Style Seasoning Blend I can’t wait to try. I have a feeling it’s going to be as life changing as the one used in this recipe.
The Simple Kitchen is full of recipes inspired by real living and easy cooking. The kind of food you can make and eat every day and serve to guests on the weekends. On my list to make this coming week from the book…Stacked Cantina Nachos (perfect for the World Series), Triple Cheesy Mac and Cheese and Lemon Garlic Chicken Thighs and Veggies. All sound and look amazing.
One of the things I’ve loved most about this Cheesy Taco Skillet recipe is its versatility. I have made it at least three different ways, based on what meat I have available and it was perfect every, single time.
I have used all ground beef as written in the recipe. I have also used half ground beef and half ground turkey as well as all ground turkey. It has been delicious each and every way. The seasoning has been perfect every time with each meat mixture. I have even added in a cup of cooked quinoa for an extra protein punch and it was also perfect. So many options!
You could easily put your skillet right on the table and have everyone dig in with corn chips or serve it in individual bowls. We have even scooped the mixture into warm tortillas. Either way it has been delicious and is on my monthly meal rotation from now until forever.
I hope you get to enjoy this soon and don’t forget to pick up a copy of The Simple Kitchen for more easy and delicious recipes.

Cheesy Taco Skillet
Ingredients
Mexican Seasoning Blend:
- 4 Tablespoons (30 g) New Mexico chile powder
- 2 Tablespoons (14 g) smoked paprika
- 2 Tablespoons (14 g) ground cumin
- 1 Tablespoon (9 g) garlic powder
- 1 Tablespoon (7 g) onion powder
- 1 Tablespoon (3 g) dried oregano leaves
- 2 teaspoons ( 2 g) crushed red pepper flakes)
- 1 teaspoon cayenne pepper
Taco Skillet:
- 2 lbs (908 g) lean ground beef (88% lean)
- 2 teaspoons (12 g) kosher salt, divided
- 1/4 cup (28 g) Mexican seasoning blend (recipe above)
- 1 (15 oz (425 g)) can reduced sodium black beans, rinsed and drained
- 1 (14.5 oz (410 g)) can fire-roasted tomatoes with garlic
- 1 (15.25 oz (427 g)) can niblet corn, rinsed and drained or 1 cup frozen corn
- 1/2 cup (120 ml) water
- 2 cups (240 g) freshly shredded Colby Jack cheese
- tortilla strips for serving (optional)
- chopped scallions, for serving (optional)
Directions
- For the seasoning blend, combine all ingredients in an airtight 8 ounce mason jar. Seal and shake until well mixed. Use as desired. Store in a cool, dry, dark place.
- Heat a 10-inch skillet (I used a 12-inch) over medium-high heat. When hot, add the ground beef and 1 teaspoon of the salt. Cook, stirring, until beef is cooked through. Drain any excess drippings if you have any. Sprinkle the seasoning and remaining 1 teaspoon of salt over the beef. Stir until the beef is completely coated with the seasoning. Add the black beans, tomatoes, corn and water. Stir to combine.
- Bring to a boil, until the water has mostly evaporated, about 3-5 minutes. Sprinkle the cheese on top and stir. Sprinkle with tortilla strips and scallions if desired.
