These baked Mini Turkey Chipotle Meatballs are perfectly sized and flavored to be enjoyed in soups, pasta dishes or by themselves. They can easily be frozen and used as you need them, making them the perfect addition to almost any meal.
Who doesn’t love a good meatball? Let’s face it, they’re delicious. Since it’s hard not to eat way to many of them, I like to make a turkey version, which helps keep the calories in check. My favorite way to enjoy these turkey meatballs are to add them to my Skinny Italian Vegetable Soup. It’s such an awesome addition.
Since these meatballs are baked, they are even easier to put together than you can imagine.
Line them up on a tray and pop them in the oven for less than 20 minutes. Boom…you have dinner.
I like using a large, rimmed baking sheet to mix all my meatball ingredients, but you can use a bowl if you like.
Tip: If you want to make sure the flavor is right for you and your family, after you mix all the ingredients together, throw a small sample in a frying pan with some cooking spray so you can taste the seasoning before forming into meatballs.
Lined up and ready for the oven, you can see the minced pieces of chipotle popping out…it gives them such a great flavor since turkey meatballs by themselves can be a little bit drab on flavor.
Out of the oven, baked in chicken broth, they are flavorful and ready to be enjoyed however you choose.
It’s hard not to eat them immediately out of the oven.

Mini Turkey Chipotle Meatballs
Ingredients
- 32 oz ground turkey breast
- 1 large egg
- 1/2 cup Italian seasoned breadcrumbs
- 1/2 cup minced yellow onion
- 1/2 cup finely grated Parmesan-Reggiano cheese
- 1 Tablespoon dried parsley leaves
- 2 chipotle peppers in adobo sauce, minced (remove seeds to cut down on the heat)
- 1 Tablespoon adobo sauce
- 1 teaspoon coarse ground pepper
- 1 teaspoon table salt
- 1/2 teaspoon granulated garlic
- 1/2 teaspoon smoked paprika
- 1 cup low-sodium chicken broth
Directions
- Preheat oven to 425 degrees F.
- In a large bowl or on a rimmed baking sheet mix together all ingredients (except the chicken broth) with your clean hands.
- Form meat mixture into meatballs (with your hands) that are 3/4 oz, 24 grams or 1-1/2 inches in size.
- Place meatballs on a large rimmed baking tray. Add chicken broth to tray and bake for 16 minutes.
- Use meatballs immediately in soup, pasta dishes or enjoy by themselves. They can also be frozen for later use.
