When it hits two and three o’clock in the afternoon, everyone at my house is looking for a snack, myself included. Something that is satisfying and can get you through to the dinner hour is what is requested most. What, no ice cream?
With summer tomatoes at their peak, avocados in season and fresh basil multiplying overnight in the garden, these Avocado Caprese Bites are the answer to snack time at my house.
First of all, they are super CUTE! And since we eat with our eyes first that is important. They are also tasty, as in, you kind of can’t stop eating them, so make enough for everyone. These are also a great party appetizer, serve them up at your next get-together.
But the most important reason to serve avocado as a snack is its superfood status. Avocados are loaded with healthy fats and nutrients such as oleic acid, lutein, folate, vitamin E, monounsaturated fats and glutathione. These can help protect your body from heart disease, cancer, degenerative eye and brain diseases. Have one every day and enjoy the benefits. They also taste amazing.
Place all ingredients on a toothpick and drizzle with balsamic glaze.
And if you knock into the table while photographing, they will fall over.

I LOVE your addition of avocado to the classic little caprese bite! Also, that melon baller is my arch nemesis. I never get a perfect ball.

This has to be one of those MOST creative and delicious ways I have seen to use avocado. I am adding 6 avocado’s to my grocery list… wait, make that a dozen! I have a feeling these will be pretty darn popular!

Love these! Any way to make ahead for a party, but keep the avocado from turning brown?
Cathy says
You can have the other parts ready to go and add the avocado last otherwise, not really.
