Bring on the warmer weather with these delightful Strawberries and Cream Popsicles. They are awesome to the last lick and making them at home is so easy!
With kids home for the summer, my house has become a revolving door of daily activity. Everyone is always looking for a little something to nibble on to get them to the next meal. When it’s hot, not just any snack will do…I get that. And I prefer having things around that don’t require my input, which is why these Strawberries and Cream Popsicles make the perfect grab and go item.
These popsicles are so pretty. I was worried my boys would think they were too pretty, deeming them girly food (whatever that is), and not want to eat them. Luckily, this hasn’t been the case. But they are gorgeous and party worthy! Serve them over a big bowl of ice with sliced strawberries. They will disappear immediately or they will melt:).
If you don’t have popsicle molds, these are my favorite. The popsicles come out perfect every time.
I chopped my strawberries into small enough squares to fit easily into the popsicle molds.
Pack as many strawberry chunks as you can right into the molds.
Fill each mold with the liquid mixture right to the top and push down with a spoon to account for any air bubbles. I slam my molds against the counter a few times and then add more liquid as needed.
Freeze your strawberries and cream popsicles overnight or at least 8 hours.

Strawberries and Cream Popsicles
Ingredients
- 1 cup whole milk
- 1/4 cup heavy whipping cream
- Greek strawberry yogurt (full fat)
- 2 Tablesppons cornstarch
- 1/4 cup honey
- 1/4 cup sugar
- 1 Tablespoon strawberry extract
- 3 cups chopped, fresh strawberries
- 10 popsicle sticks
Directions
- Using a 2 cup measuring container, add milk and heavy cream. Spoon in strawberry yogurt until mixture reaches 2 cups. Add cornstarch and whisk until smooth. Pour into a small saucepan; add honey and sugar and strawberry extract. Slowly bring mixture to a boil over medium-low heat; whisking continuously. Once it begins to boil, continue whisking until it begins to thicken (5 minutes). Remove from heat. Set aside.
- Fill popsicle molds with strawberries. Pour strawberry mixture over the top. Make sure to press down on filled molds with a spoon, making sure to get rid of any air bubbles in between the strawberries. I slammed my molds on the kitchen counter a few times too. Add more strawberry mixture to each mold as necessary. Add popsicle sticks. Freeze overnight and remove from popsicle molds.
