If you are looking for something easy to make for dinner with an intense, good flavor…this might be for you. I think we all forget about the awesome chicken sausages that are now available in the stores. There are so many flavors to choose from.
I love chicken sausage with breakfast too, fried gently and served with eggs and toast. It’s such a nice low-calorie and protein filled way to start the day. We love it over here.
Have you ever reduced apple cider? The flavor is incomparable. Do not substitute apple juice, it’s just not the same taste. The sausages I used were spinach and feta flavored, I think chicken and apple sausages would also be perfect.
I served this with a side of garlic mashed potatoes and it was wonderful. The perfect easy meal for this busy Mom! Enjoy.
In a large skillet or shallow heavy pot, heat oil over medium-high. Add onion and sausages and cook until sausages are deep golden brown, 6 minutes, turning sausages and stirring onion halfway through.
Add sage and cider and season with salt and pepper. Bring to a rapid simmer.
Cook until cider is syrupy and coats the back of a spoon, about 30 minutes.

Ingredients
- 1 Tablespoon olive oil
- 1 large yellow onion, cut into 1" wedges
- 1 pound chicken sausages
- 7-8 fresh sages leaves
- 3 cups apple cider
- kosher salt and ground pepper
