The mornings can be a bit crazy around here. Between getting everyone up and before the coffee begins to kick in, I am faced with what to make for breakfast.
While the kids would be happy with cereal or toast and bacon, my husband wants something more substantial.
This is a great breakfast casserole with lots of flavor and hearty ingredients. The best part, you can refrigerate it, cutting off a square for breakfast and microwaving for about a minute for an instant, hearty, morning meal. A dollop of sour cream is a nice addition and my husband douses it with hot sauce.
It’s quick, it’s easy and it’s good. Everyone’s happy.
This would also make a great brunch item to feed a hungry crowd. Give it a try.
In a large skillet, cook the sausage, mushrooms and onion over medium heat until meat is no longer pink; drain.
In a large bowl, whisk the eggs, milk, mustard, salt and pepper.
In a greased 13 x 9 baking dish, layer half of the bread cubes, tomatoes, cheeses and sausage mixture. Repeat layers. Pour egg mixture over the top.
Bake uncovered at 325 degrees for 50-55 minutes or until a knife inserted in the center comes out clean.
Let stand for 10 minutes before serving. This also reheats well in the microwave.
Savory Breakfast Bake
1 pound bulk pork sausage (I used Jimmy Dean)
8 oz. sliced fresh mushrooms

Delicious looking. It reminds me of the kind of thing they used to serve for breakfast at my favorite B&B I went to on summer vacation for years on end before they closed their doors. *wistful* Just the kind of thing you want to eat before a busy day to keep your energy up, but you have to grab a second helping before you go out.

I remember last year your story of the leprechauns visiting your house. Well, the naughty leprechauns visited our house during the night and my children were thrilled! I wasn’t thrilled with the mess they made or the fact that they didn’t flush after using our toilet but my kids thought it was the coolest thing ever (even if they didn’t catch any in their trap). This might just become one of my favorite recipes for breakfast. I like the bacon/egg sort of thing and Dick likes the sweeter breakfasts. But we do eat a variety by alternating between sweet and savory and we both enjoy the recipes on Noble Pig. I am on a mushroom kick now anyway, and this baked dish looks like a good way to really enjoy the flavorful mushrooms.

We make these for church all the time. I usually make mine with some bacon, hashbrowns and cheese (because that is what my kids will eat) but there are always those with shrooms, sausage, tomatoes, onions, ham, etc. Good and filling, and freeze pretty well to grab for single servings

Omit the bread add a pie crust. Bake all ingredients and call it quiche. Easier and more user friendly
