Before we get to the salad, I’m afraid I’m going to have to call someone out. I know, I know, I shouldn’t. But it involves really bad manners.
Last night I was catching up on some TV shows I had recorded from earlier in the week. I was watching the performance show of American Idol, even though I already knew who had been kicked off (thank you yahoo home page for slapping the results up there).
It was the part in the show where Randy was critiquing Lil Rounds performance and the very famous David Spade was in the camera shot, sitting right behind Randy. As Randy spoke, David Spade, who was chomping away on gum, removed the gum from his mouth and stuck it under his seat.
Now, I don’t have proof because it’s not like there were cameras on the ground. However, unless there was a wee leprechaun on the floor receiving David’s chewed gum, I guarantee he stuck that baby right under his seat.
DAVID, David, David! Shame on you, seriously, you are an adult. It is completely classless to slap your gum on the bottom of a chair.
I know I am not the only one who saw this. There must be a You Tube video of this lameness. I have chewed disgusting tasting gum way past its prime because there was no where proper to throw it away. At least think of your mother before you do something like that again. I’m sure she is completely mortified.
Am I claiming to be perfect? No. But gum offenses are one of the worst in my book. It’s completely disgusting. David, if you want to tell your side of the story, have your people call my people for clarification.
So anyway, back to the Asian Noodle Salad with Peanuts and Mint, it is fabulous. I couldn’t say enough good things about it.
It’s tasty, refreshing, light and flavorful. I ate it for lunch over several days and it did not give in to sogginess. Even the mint leaves and peanuts held up well.
I also love soba noodles so this type of salad is right up my alley, I think you will love it.
Let’s make it together…
Here’s what you will need: Soba noodles, salt, pepper, peanuts, soy sauce, fresh lime juice, vegetable oil, green onions, cucumber and mint leaves.
In a large pot of boiling salted water, cook 12 ounces soba noodles until al dente. Drain and rinse under cold water to stop cooking. Drain well.
In a small bowl, whisk together 2 Tablespoons soy sauce, 2 Tablespoons fresh lime juice, one Tablespoon vegetable oil (safflower) and pepper to taste.
In a large bowl, combine noodles, green onions, cucumber, peanuts and mint.
Toss noodle mixture with sauce and serve.
Your lunch will not be the same.
It will be better.

Asian Noodle Salad with Peanuts and Mint
Ingredients
- kosher salt and coarse ground pepper
- 12 oz soba noodles
- 2 Tablespoons soy sauce
- 2 Tablespoons fresh lime juice
- 1 Tablespoon vegetable oil
- 2 green onions, thinly sliced
- 1/2 English cucumber halved lengthwise and thinly sliced
- 1/4 cup peanuts, coarsely chopped
- 1/4 cup fresh mint leaves
Directions

I admit half the time I just swallow my gum. Of course I also eat peanut shells and a bunch of other stuff they say I should not (my mom thinks I am special). However, yeah I agree even if I was done with the gum and nowhere to put it I would definitely keep chewing it till I found a place to put it. First off someone has to clean up that mess.

Yum…I’d eat that everyday. I actually make a poor man’s (or woman’s) pad thai, using chicken flavor ramen noodles, peanut butter, and chili sauce (the one with the rooster on it). Best quick meal.

First of all, this recipe looks delicious! I’ve never cooked with the soba noodles, but I’ll have to give this a try. I love this combination.
Secondly, I bumped into David Spade a few years ago at the Elton Red Piano concert at Caesars Palace in Vegas. He was in line to get a drink and he told “his bodyguard” to buy everyone in front of him a drink so that he could get to the front of the line. When I thanked him later, he didn’t even remember that he had done that. He looked awful and acted even worse. Very Rude! And, if he’s such a big shot, why was he having to stand in line anyway!! HA! I haven’t liked him since that encounter.
