So I have this obsession. It’s Lay’s Dill Pickle Chips. Quite honestly, I can’t even have them in the house. Once they’re opened, I can’t sleep until I know that bag is empty. It’s a curse.
There is something about the acidic “dill pickle” flavor with a chip that I love. I wish I never knew about them. Which brings me to this recipe for Dill Pickle Popcorn. I was perusing some magazines the other day and came across a recipe for Dill Pickle Popcorn…I totally had to have it and couldn’t stop thinking about it.
The addition of citric acid is what makes this recipe “pop”. You can’t leave it out. I use citric acid in the kitchen a lot. It adds a vibrant sour flavor to food and even soft drinks. I think Diet Pepsi has more citric acid than Diet Coke, which is why I prefer the Pepsi. I really don’t know that for sure, it’s just an observation of my palate. Anyone know?
Anyway, sprinkling citric over fruits keeps them from turning brown. And sometimes it’s just a little addition to a sauce or another recipe that gives it a wow factor. Everyone should have it in their kitchen. I use it in the winery so I have pounds and pounds and pounds of it around, but you can get it too. It might be in the canning section of the grocery store or get it here. You will use it in so many things. Promise.
I make popcorn in the Whirley-Pop. It’s so easy and comes out perfect. I have also spent a lot of time researching the best methods and oils to use when popping. Coconut oil definitely tops the list as the best to pop with. Peanut oil is close second.
To make up the dill pickle flavoring, you will need to grind up some spices in your spice grinder.
This is a great game day snack. It will keep the troops happy until the main spread is ready!
There wasn’t any leftover! Make sure to serve it hot.
Dill Pickle Popcorn
Ingredients
Dill Pickle Flavoring:
- 1 Tablespoon coriander seed
- 1 Tablespoon kosher salt
- 1-1/2 teaspoons dill weed
- 1/2 teaspoon mustard seed
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon celery seed
- 1/2 teaspoon citric acid
For the Popcorn:
- 1/2 cup popcorn kernals
- 2 Tablespoons coconut or peanut oil
- 1/2 cup butter, melted
Special Equipment Needed:
- spice grinder
Directions
- Place all ingredients for dill pickle flavoring in a spice grinder and process until smooth. Set aside.
- Pop popcorn using any method you choose. I use the Whirley-Pop with 1/2 cup kernals and 2 Tablespoons coconut oil.
- When popcorn is ready, drizzle with melted butter. Start sprinkling with dill pickle flavoring and tasting until desired flavor is reached. Everyone will use a varying amount.

I have t tried the dill pickle chips but I can’t trust myself around salt and vinegar chips, so I’m pretty sure I’d love them. And this popcorn! This sounds Delish. Must I share? đŸ˜‰

Ok, this whole citric acid thing is new to me. I know I read it on the ingredients list of foods, but never thought about using it in my own kitchen. I do have some Fruit Fresh, I’ll have t see if it’s pure citric acid. Now, let’s talk popcorn. My Whirly Pop lives on my stove top. Love it. I happen to like using olive oil and it’s end flavor with the popcorn. I have used coconut oil with great results. I’ve not tried peanut oil. But I do know I don’t like canola oil to pop corn. No matter what heat level I set my gas stove, I still end up with a “burnt” flavor in the popcorn. It just heats up too fast. I do experiment with flavors, so must give this dill pickle a try. Avocado oil has a high smoke point. I use an air popper then drizzle 1/2-butter & coconut oil with a spice mix & sprinkle with grated parmesen cheese.

Do you start with the kernels in as it heats? I find one or two kernels to wait for the popping, the add the rest. I start on highest… Then wait until it starts popping again then reduce to lowest heat to finish. Works well. Also making sure to not add seasonings that burn easily to the popper. I’ve had flop batches using store seasonings… Especially bad when they had sugar in it without me checking. Not every seasoning can be whirled pop safe. Always needs a salt base, sugar is a sure fail… Herbs a sure fail… Other than that the high to low worked with any oil I have used.

I love having citric around, I use it for so many things. Today I added it to my guacamole and so far it’s not turning brown. And it livens up the flavor too.

Are you my long-lost sister? I can’t get dill pickle chips in my area. A friend in Canada sent me some once. The only reason I didn’t wolf them all down was that they were my only chance to have them.
I also love my Whirly Pop and love coconut oil for my oil (didn’t movie theaters get scolded by the health police for doing that?). I believe it was you who suggested using bacon fat once. I wouldn’t mind using duck fat either.
I’m thinking a batch of pickle popcorn would suit my ailing self well right now. My husband hates it when I flavor popcorn, so I’d have it all to myself!

Everybody’s mentioning dill pickle chips. Was there a recipe or some reference to dill pickle chips? And isn’t FRUIT FRESH the same as citric powder? This recipe sounds like a winner!

Popcorn Wagon sells a dill pickle flavor popcorn seasoning and it is delicious! So, if you don’t want to make this recipe you can buy it from them online or in store if you have one nearby.

I too am a lover of all things dill pickle. I first found dill pickle chips back in Minnesota in the Old Dutch brand. I was hooked. I live in CA and my family used to send me care packages of dill pickle chips. When Lay’s started doing them I no longer needed the care packages. Unfortunately, or fortunately?, not ever place carries the dill pickle chips so I sometimes have to work to get my fix. I also am a popcorn fanatic. I use my flat bottomed wok to make great popcorn. I love the idea of the home made dill pickle seasoning, I must try it. If you want a shortcut, go to spicebarn.com and look up their popcorn seasonings. They have dill pickle. Granted it is filled with sodium but the taste is awesome. I found myself putting it on everything. Check it out.
