
Are you all dying for a vacation? Like a real one...at a spa, on the beach at a she-she-la-la place? Me too. So here's the thing, 20 bloggers were asked by Smart Balance to participate in their Smart Balance Blogger Recipe Challenge.
Basically, Smart Balance wanted us to create a recipe using one of their products (but I used 5) in a dish. The blogger with the most likes/votes wins the Grand Prize, a trip for two to Canyon Ranch Hotel & Spa in Miami Beach, Florida.
BUT WAIT...if I win, I also get to give one of these trips to YOU, YOU, YOU! The loyal people who come here everyday and listen to me talk...about nothing.
Can't you see us now, on the beach in Miami...sipping drinks, eating shrimp...well, don't worry, we won't be there together (I won't cramp your style like that) but we'll Instagram each other like we were. K.

These mini peppers are my faves, I'm so glad they are a staple in the grocery stores. When roasted they are sweet and make any dish "pop" with flavor.

A little bit of oil will help roast these to perfection.

Have you ever used this cooking spray? I have to say it has the BEST sprayer that kind of fans out. I'm never giving it up.

Kicked Up Breakfast Nachos with Fluffy Eggs, Avocado Cream & Roasted Peppers
Ingredients
For the peppers:
- 8 mini peppers, seeded and cut into rings
- 2 jalapeno pepper seeded and cut into rings
- 1 Tablespoon Smart Balance Cooking Oil
- Smart balance Non-Stick Cooking Spray
For the Avocado Cream:
- 1 bunch of fresh cilantro, top half only, stems discarded
- 2 avocados, seeded and quartered
- 1/4 jalapeno pepper seeded and chopped
- 4 ounces cream cheese
- 3/4 cup chicken stock
- 1/4 cup Smart Balance Omega Plus Light Mayonnaise Dressing
- 1/4 cup sour cream
- 1 Tablespoon Smart Balance Cooking Oil
- 1 teaspoon kosher salt
- 1/2 teaspoon ground cumin
- 1/2 teaspoon black pepper
For the eggs:
- 1/2 pound ground breakfast sausage
- 6 Smart Balance Omega-3 Grade A Natural Large Eggs, lightly beaten
- 1 cup shredded Manchego cheese
Extras
- 1 (15 oz) bag tortilla chips
- cilantro leaves for garnish
- fresh salsa
Directions
- For the peppers, preheat oven to 450o F. Place pepper and jalapeno rings in a bowl and toss with oil. Spray a large rimmed baking sheet with cooking spray and place pepper rings on sheet, do not overlap them. Roast peppers about 10-12 minutes or until soft. Remove from oven and set aside.
- For the avocado cream, place all ingredients in a blender or food processor and blend until smooth. If it is too thick, add more chicken stock until desired consistency is reached.
- For the eggs, brown sausage over medium heat until cooked through. Add eggs and scramble with sausage until fluffy. Remove pan from heat and stir in cheese.
- To assemble nachos, place a layer of tortilla chips on a large platter. Drizzle avocado cream over chips, followed by a layer of sausage-egg-cheese mixture. Scatter with half of the pepper rings. Repeat. Garnish with fresh cilantro leaves and serve with fresh salsa on the side.

You will just die when you taste these eggs and avocado cream, it's a breakfast for champions

OMG, Breakfast feast! Never have I seen a more colorful dish of breakfast food. This breakfast would wake up anybody with a great start to their day. You wowed us with this one.

Wow, Cathy. This is exactly what I want to eat right now. My kids are screaming and whining, and I just want to have that plate of breakfast nachos, and sit out on my back patio and eat the whole thing by myself before my kids can come and find me.

That’s the best looking breakfast I’ve never tried before! I think the avocado and egg would be my favourite additions to the nachos.
