Cherry-Coconut-Chocolate Chip Ice Cream Recipe
If coconut ice cream is your obsession, one bite of this Cherry-Coconut Chocolate Chip version and your taste buds will head into overdrive. Refreshing and addictive describes this ice cream best, along with that magical feeling of being on a tropical vacation with every bite.
This is a no-custard required ice cream, making it so simple and easy to throw together. However, the ingredients for the ice cream do need to be pre-chilled so they freeze properly in the ice cream maker, so a little pre-planning is required.
I highly suggest filling your freezer with this seasonal ice cream, it’s truly one of the best!
Cherry-Coconut Chocolate Chip Ice Cream Ingredients
Pantry Ingredients
- granulated sugar
- creme of coconut -this is not coconut milk, but sweetened coconut creme. It is often found in the section where drink mixers are found or where the alcohol is located. My fave brand is Coco Lopez.
- chocolate chips – honestly you can use any chocolate you love, just give it a rough chop
Fresh Ingredients
- fresh, sweet cherries
- heavy cream
- whole milk
How To Make Cherry-Coconut-Chocolate Chip Ice Cream
Step One: Several hours prior to churning the ice cream, combine heavy cream, creme of coconut and milk in a large container (It’s preferable if this container has a pour spout); stir well. Place container in the refrigerator to get nice and cold. (several hours or the night before.)
Step Two: Next, make the cherry mixture ahead, so it may also cool down before being mixed into the ice cream. Place the cherries, sugar and lemon juice in a medium sized sauce pan over med-low heat. Cook, breaking up the cherries with a wooden spoon as they soften; about 10 minutes. Remove from hot pan and let cool. Place them in the fridge when they have cooled down enough.
Step Three: When all ingredients are cold, start ice cream machine churning and pour cream-coconut mixture into the ice cream maker through the pour spout. Once ice cream is frozen, add cherry mixture and chocolate chips. Churn just enough to combine, about 1 minute.
Step Four: Place ice cream in the freezer to harden further. About four hours or overnight.

How Do You Pit Cherries Without A Cherry Pitter?
First of all, I highly suggest getting a cherry pitter, it’s so nice to have one around. A cherry pitter also pits olives so it’s a double win! And you absolutely want the cherry pitter with a splatter screen, you’ll quickly find out why.
However, if you don’t want to get a cherry pitter, you can easily insert a straw or cake decorating tip into the cherry where the stem attaches. Working over a bowl, push the straw through the cherry until the pit pops out. If the cherry is really firm, try using a cutting board to push against while pushing the straw through.

- 1-1/2 cups whole cherries, pitted
- 1/4 cup sugar
- juice of half a lemon
- 2 cups heavy cream
- 1-3/4 cups (or 14 oz can) creme of coconut -sweetened*
- 3/4 cup whole milk
- 3/4 cup semi-sweet chocolate chips, roughly chopped or any chocolate you prefer
