Healthy Snack (#1)


I try to eat a couple healthy snacks every day.  The time between breakfast and lunch and lunch and dinner is just too long!  Not eating something fattening can be a challenge, but is a necessity.  The type of business we are in promotes very good eating…the wine business is all about good food, good wine…events…enjoyment…it’s easy to get carried away with the calories.  A good snack needs to be low in calories, high in fiber or protein and low-in-fat.  This formula will keep you going until meal time. 

This particular snack is a great pick me up.  It uses canned pumpkin, which is very healthy and low cal.  And with Fall coming up, it always seems like there is a half a can of pumpkin left in the fridge from making muffins or pancakes.  Bring this to work or have it at home. You will love it, and so will your waistline.

1/2 cup low-fat vanilla yogurt
2 Tablespoons canned pumpkin
a couple pinches of pumpkin pie spice

114 calories, 1g fiber, 6g protein, 2g fat

  2. I’m so happy fall is near and pumpkin will be reappearing on the shelves! This sounds great..love that you can also use up the pumpkin pie spice with this!

  3. A roommate and I used to make the pumpkin custard recipe on the can, but this is so much faster and healthier. I can’t wait to try it! Thanks for sharing.

    This will be so good using nonfat vanilla Greek yogurt! Ups the protein and decreases the carbs. Yum- thank you!

    I crushed *just one* gingersnap cookie over the top to add a little zip and a bit of texture. I bet a few toasted almond slices would also be delicious!
