If you are thinking of an Asian inspired meal for Valentine’s, or any other day, this will work as a perfect side dish. It’s quick, it’s easy and has a nice earthy flair.
Best part, these noodles pair perfectly with our handcrafted, Pinot Gris wine. Since our Pinot Gris has a lively, citrusy, character (unlike other Pinot Gris with varying flavor profiles), it pairs perfectly with Asian Fare…even when the food is very spicy. Imagine these noodles with another favorite Asian main dish and an icy, cold glass of our Pinot Gris. You won’t disappointed. I promise.
Since Valentine’s is on a Monday night, these noodles are the perfect dish to get your dinner on the table quickly. Who wants to spend the whole night in the kitchen anyway?
Cilantro Ramen Noodles
3 packages ramen noodles (3 ounces each)
2 teaspoons canola oil
1 teaspoon toasted sesame oil
2 Tablespoons minced shallots
2 Tablespoons low-sodium soy sauce
Salt to taste
1/2 cup chopped fresh cilantro
Blanch noodles in boiling water in a medium pot, 3 minutes. Drain noodles and rinse under cold water. Use a salad spinner to remove excess water.
Heat canola oil and sesame oil in a large nonstick skillet over medium-high. Add shallots and saute until softened, about 1-2 minutes (do not burn).
Deglaze skillet with soy sauce, then add noodles, tossing to combine. Season noodles with salt; stir in cilantro right before serving.

You had me sold as soon as I saw cilantro and noodles in the same sentence. Now that we are finally settling in and I have been learning more about wines by going to wine classes, I am going to have to get myself some of your wine! I am finding that my favorite so far is a white wine with a fruity (grape or peach) scent and a buttery taste on the tounge. Do you have something that would be similar that you could recommend from your line?

Good for you going to wine class! Our Pinto Gris is the only white wine we make at the moment. It does not have peach overtones but I once and I well I do get some pineapple flavor along with some citrus. This a nice, clean wine that goes well with so many foods. It’s done really well.

Oh, I’m game to try this one, Cathy! I’ll just use some thin Asian rice noodles (and gf soy sauce) to make it gluten free. Yummy combination of flavors. Can’t even imagine how lovely these noodles would be when consumed with your Pinot Gris wine, which sounds really, really good by your description!
