In my oldest son’s current quest to somehow incorporate Mexican food with his love of burgers (first it was the Taco Burger), he asked for one that tasted like a burrito. Hmmm, he must be growing.
Luckily there is someone over at Food Network thinking like him and has come up with all things “burger”, in every nationality you can imagine…Chinese, Greek etc. Luckily, Mexican food burgers were also included.
Anyway, the beef, the refried beans and queso cheese were exactly what he was craving. It was quite a messy burg to eat but he didn’t seem to mind. The corn chips gave it a nice crunch and put a smile on his face.
I can’t wait to see what he asks for next….maybe enchilada burgers? Who knows. A hungry tween-boy must be what it is like living with a pregnant woman who has cravings all over the board (I know I did). It keeps life interesting!
Grill up your favorite burgers. Dollop queso cheese on the bottom of the hamburger bun and place cooked patty on top. Place a scoop of warmed refried beans on top of the patty. Pour warm queso cheese on top of the beans.
Place tortilla chips on top of the cheese.
Serve to someone really hungry.

as a Texan, I can tell you that sounds sooo good:) One of the many big things down here in burgers is a chili cheese burger ( also messy to eat), as well as burgers with jalepenos.

Great idea for a burger topping. Hmmm..what would make a good enchilada flavor? Green chiles, enchilada sauce, and some cotija cheese?
A good burger is always messy. Never apologize for that!
