Sun-Dried Tomato Dip


It’s that time of year again.  I know, I know it’s so important…more than you think.  You see, it’s almost the holidays and we are smack dab in the middle of football season, sooooo…it’s time to get your “dip repertoire” down pat.  You don’t want to be dipless at the many upcoming gatherings from now until February.

I think every party, fancy or casual, needs dip.  It’s just not a get together without dip.  And it’s definitely not fun watching the game or going to a tailgate party without some seriously, yummy dip.

Here’s one of my new faves, Sun-Dried Tomato Dip.  It’s hearty, it’s tangy and I love it.  I almost ate the whole thing…thank goodness I did my five miles or I’d have to go back on that diet!

Don’t leave out the fresh tarragon in this one, it gives it that little something-something in every bite.

This is on my dip list for the season and you can guarantee I will be trying many, many, more.  Stay tuned.

 

Blend cream cheese, yogurt, sour cream, tomatoes, shallots, lemon juice, zest and salt in a food processor until smooth.

 

Fold in parsley and tarragon, then chill for at least 1 hour.

 

Serve with bread or I think bagel chips would also be a good choice.

Sun-Dried Tomato Dip
Adapted from Cuisine at Home

8 oz. cream cheese, room temperature
6 oz. plain, lowfat or nonfat yogurt
1/4 cup sour cream
3/4 cup oil packed sun-dried tomatoes, drained
1/3 cup shallots, coarsely chopped
1 Tablespoon fresh lemon juice
1/2 teaspoon  lemon zest
1/2 teaspoon kosher salt
1/3 cup fresh parsley, finely chopped
1 Tablespoon minced fresh tarragon
Bread or bagel chips

Blend cream cheese, yogurt, sour cream, tomatoes, shallots, lemon juice, zest and salt in a food processor until smooth.

  1. Yes, one would not want to be dip-less this time of the year.Better be careful who we bring to the party with us, and also make sure to bring this dip. This does look like a great dip, I love all the ingredients in it and it looks like it is pretty quick and easy to whip up.

    Okay….the sun dried tomato dip has my name on it.
    Yum. I am a little skittish about shallots…but I’ll be a brave soldier and try to use them again. Last time I used them, they seemed a bit metallic.

    I agree — a few good dips is an important thing! Better yet, to have a recipe you can make with pantry items for last minute entertaining. This looks delicious!

    Love the idea with sundried tomatoes….have many bell peppers from the garden and think grilled and into the same cream cheese mix will make a nice variation…thanks !! Love your posts…

    Boy! This dip is just perfect for munching during the football game. A good mix of flavors. I am growing my own herbs and I tell you, it makes all the difference in the world to have them fresh and on hand for times when you want to spice up a dip or dish. Thanks for this recipe.     I need a dip to bring to a race party this weekend and I think this would be just perfect. I love tarragon…and sun dried tomatoes together…the balance is perfection. I could make that roast and serve it with this…yummy.

    Arghh!!! You’re killing me here with this recipe! *sob* I just made oven cured tomatoes yesterday and ATE them. They would have worked magnificently with your awesome recipe. I love recipes like this, and just know I would love this one. Now I can only dream about how wonderful the eaten tomatoes would have been in this recipe. I guess I could drown my sorrows in a slice of your pie from yesterday. Sniffle.

    I know everyone groans when you say “dip” but I have to tell you, the ones I see are fabulous. That old onion soup mess is long gone. I have one I love with salmon and dill. I could eat the entire bowl. Now I have a new one to try! Can’t wait.

  32. Oh yum that sounds so delish and yep I would certainly need to do the 5 mile walk actually it sounds worse here cause it’s 8 klms ouch. Our footy seaon has just finished so what will I do while I eat that dip???
