Mint Julep Brownies with Candied Pecans
You’ll feel like you’re at Churchill Downs watching the Kentucky Derby with these Mint Julep Brownies. They are the perfect ending to the most exciting two minutes in sports.
Years and years ago I was lucky enough to be an infield spectator at Churchill Downs racetrack for the Kentucky Derby. In all honesty, you can’t really see the race from the infield and it’s hardly millionaire’s row, but it’s the place to party like a rock star and trust me we did.
While celebrities and proper Southern women view the race from their box seats, wearing elaborate hats and sipping their Mint Juleps, the infield crowd is partying on with reckless abandon. The hats in the infield are all homemade and have been some of the most creative head gear I’ve ever seen.

Ingredients for Mint Julep Brownies

Pantry Ingredients
- dark chocolate – use at least 70% cacao chocolate, semi-sweet chocolate is too sweet for this recipe
- granulated sugar
- all-purpose flour
- table salt
- peppermint extract
- bourbon – does not need to be an expensive bourbon
- brown sugar – light or dark works
- pecan – halves only
Fresh Ingredients
- butter – for the best flavor when baking, use European butter such as Kerrygold
- eggs
How to Make Mint Julep Brownies
Step one: Preheat oven to 350 degrees F.
Step two: In a medium saucepan, warm butter and chocolate over low heat until melted and smooth. Remove from heat to cool slightly.
Step three: In a large bowl beat eggs on medium speed for 2 minutes. Add the cooled chocolate mixture, sugar, flour, salt, peppermint extract and bourbon and stir until fully incorporated. I thought this was a strange order in which to add ingredients but it worked well.
Step four: Pour batter into a greased 9 x 13 pan (I line my pan with parchment paper). Bake for 25-30 minutes or until a toothpick inserted in the middle comes out clean. Cool completely before cutting, if you can wait.
Step five: While the brownies are baking and cooling, make your candied pecans.
Step six: For the pecans, in a small sauce pan, melt butter over low heat. Add brown sugar, stirring until combined. Add pecan halves, cooking over low heat until mixture begins to darken; about 2-3 minutes. Remove from heat for about 15 minutes until pecans cool and sugar hardens. Break the pecans into pieces for garnish.
Step seven: For an authentic Mint Julep presentation, splash each serving plate with some bourbon and place a brownie slice right on top. This step is optional, but it really tastes good. Garnish each slice with freshly whipped cream, candied pecans and a sprig of mint.
Recipe Tips
- Use dark chocolate that is at least 70% percent cacao or more, otherwise the brownies will be too sweet.
- I prefer to line my baking pan with parchment so I can easily lift the brownies out after baking so they cool faster.
- Drizzle each serving plate with bourbon and set a brownie on top, for extra bourbon flavor.
- Top with whipped cream and garnish with fresh mint leaves
Garnish each slice with freshly whipped cream, candied pecans and a sprig of mint.
