The Lazy Cook's Baklava
I have no problem admitting laziness and apathy sometimes takes over in the kitchen. There are goodies I long to eat but don't have the time or energy to make them. Sad but true.
Being an admitted nut-a-holic, I often crave desserts laden with nuts of any kind. I'm not picky.
Baklava has always been one of my weaknesses and a labor of love for me. Always worth making and eating.
But as life is busier than ever, you better believe I jumped for joy when I came across this recipe for The Lazy Cook's Baklava. Well, that's not what the magazine called it but, Baklava Cups, just didn't do it for me. I wanted to celebrate my find of a super-quick, easy and absolutely yummy, lazy girl treat.
This recipe will give you Baklava taste in less than 30 minutes. These are also great for a dessert buffet where hundreds of little bite-sized treats are needed.
So delicious, easy, yummy and for the lazy. You will love them, but you must love nuts too.
Since I found this recipe in a magazine, I'm sending it over to Cream Puffs in Venice for Magazine Mondays. This is an event I just discovered. The premise is, if you made it from a magazine, send it over. Since, that happens weekly over here, I've decided to join the fun. You should too.

Let's make these up, they'll be ready in minutes...
Here's all you will need: Frozen mini fillo shells, honey, pistachios, almonds and cashews. Ingredients not shown: Water.
Chop pistachios, cashews and almonds until you have a 1/3 cup of each. Combine into one mixture. Fill shells with nuts and bake in a 350 degree oven for 8 minutes or until shells are lightly browned.

Mix 1/4 cup honey with 1 teaspoon water. Remove the cups from the oven and spoon in honey mixture (really fill them up).
Serve warm or at room temperature.

This is easy enough for the kids to handle in the kitchen while you work on dinner. Even if they do not like nuts, they love to just be involved in the meal preparation. Mine always do.

There is no shame in taking shortcuts for delicious results. In fact, I'd say that it shows remarkable ingenuity, AND it provides people with sweet little bite sized morsels of goodness that don't stick to your fingers, chin, napkin, etc in a blanket of sugar syrup.
Your wee baklavas are darling. I would even go as far as to say that in terms of baklava, these are a somewhat healthier option because the filo to nut ratio is skewed on the side of heart healthy omega 3! See? Silver linings all over the place.

OMG...you have just found the perfect dessert for me! I have those shells in my freezer at this very moment, all I need is cashews and I'm in. Hmmm...these might appear on my Easter table.

Oh these are perfect and less fattening than real baklava. I love it but it takes so much time. What an amazing alternative. Thank you. I'm a nutty, nut too.

And more economical then me running to the Greek Church bake sale and slapping down a fortune for baklava made by all those Sweet, Little, Greek Grannies...they are going to hate me forever now.

I always have a couple of boxes of those phyllo shells in my freezer -- they're great with sweet or savory fillings, and have bailed me out of more than one entertaining "emergency."

Omgosh! Love these. I've made normal baklava a couple of times in my life because I love it so much, but it was really time consuming. On my way now to the store to see if I can find those mini filo cups. Thanks Cathy!

I will make these one day soon, possibly even Wed. for a baby shower I agreed to make a goodie for. Yep, that's it. I will do it.
I LOVE nuts, and you know what they say, you are what you eat....
Even though there is no chocolate, or banana, nuts are right up there as my top three favorite things! mmmm.

I really do not care for baklava at all, but it's one of Danny's favorite desserts. I'll have to make this as a special treat just for him. The kids will probably eat it too. They can't turn down anything sweet.

Hate to break it to ya girlfriend, but you are just a lazy person wannabe. I would totally see that recipe and think to myself "Self, that would be something quick and easy you could make." I might even get so far as to write the ingredients down on a shopping list.
It would not get any farther than that.
Although! I could probably drum up the ambition to get an airline ticket out to your place to have some! Ha!
