A big thanks to all who have already submitted your Super Bowl recipes for the contest. How am I going to choose? Everything sounds so good!
Tonight at midnight is the deadline to get your recipe in for consideration, so don't forget!
Anyway just reading all these recipes about dips, chili's, soups, sandwiches and desserts made me want to make dip myself. You people are creative!
I love black beans so this Jalapeno Black Bean Dip is one of my go to choices. It has wonderful flavors and is not too spicy (the cheese and the mayo take care of that).
It's also perfect for the Super Bowl, so let's make it!
Here's what you will need: Black beans, jalapeno, mayonnaise, Monterey Jack cheese, ground cumin, garlic powder and parsley flakes.
Drain one 15 ounce can black beans and mash them with a fork. Add 1/2 cup shredded Monterey Jack cheese, 1/3 cup mayonnaise, 1 jalapeno pepper (seeded, deveined and chopped), 1/2 teaspoon ground cumin, 1/4 teaspoon garlic powder and 1/4 teaspoon parsley flakes and mix until combined.
Spoon mixture into a 1-quart casserole, then top with remaining 1/2 cup cheese. Place onto a baking sheet and bake at 375 degrees uncovered for 20 twenty minutes or until heated through.
You just know it's good.
Serve with your favorite dippers while rooting for your team.

This would be something new to bring to our family gathering in Feb. They are used to me bring the same old thing. This would shake it up!
Totally unrelated to this post, but I have been wondering-when you use butter in your recipes and photograph it, it looks like a mini version of a regular stick of butter. Is it a brand that just makes theirs more square than rectangular? The Dude looked at it too and thought it looked ‘mini’. Just wondering
Yay! An excuse to go out and buy some tortilla chips! I mean thin cut wedges of carrot of course!
I’m on a calorie count so if I make this I’ll have to use veggies to dip into it, but I’m sure it’ll be fantastic with strips of peppers and carrots!
With all those beans its gotta be healthy
Looks delish!
The recipe looks yummy, even at this time of the morning, excepting the beans part. I will delete the beans for myself and double the cheese. Or make it just as written for everybody else!
Have you considered your own cook book ?
YUM. I second the cookbook. You really NEED to. For us!!!
Ummm, yeah…this will definitely get made this coming Sunday!!!
Thanks for a great recipe. I succumbed to the baking fairy, but I did not eat any of it. I smelled it often, but there are no calories in aromas, right?
Love ya,
Marlene
I’m a big black bean fan so this recipe looks terrific! (I even make a brownie recipe where black beans take the place of flour!)
Shirley
I love black beans as well so this would be perfect for the game or anytime.
I’d like a big dollop of that for my egg whites this morning. Thank you.
You cannot go wrong with this one! I don’t know anybody in my crowd who would not gobble that one up. It has all the right ingredients for great taste. I would say it is easy pleasin’.
THe dip looks amazing with the melted cheese! Sounds really healthy with beans.
wow – thanks so much for the reminder….with the contest ending tonight! – I will make sure to send you an email…with a recipe of course…
can’t wait to learn about the all the wonderful recipes people entered!
Black beans are so good for you…seriously with all of your good recipes…you could have won the 250.00 You didn’t need us.
Looks quick & easy & tasty. I think I can handle that. I’ll probably add a little chipotle, cause I love that smoky warmth!
Great looking dip and so easy to make! I can’t wait to make this on game day!!
I could eat a whole bag of chips if I had this dip. Love black beans.
Oooooh–I just know that’s good!
Yikes–I need to get my recipe in–I’m trying to decide between 2…
CATHY!!!
I think I’m in love with this recipe. It has all my favorite stuff! I’m so tempted to run to the store right now, pick up the ingredients and make it for myself for lunch. It looks astounding.
Kudos from one black bean admirer to another. And hey, the black beans makes the whole dip healthy, right?
I’ll have to give this a try. As long as it’s not too spicy, it’ll be wonderful!
I love black bean dip. This recipe is a keeper! I’m excited to see what others have submitted for their “big day” recipes.
I love dips! And how did that deadline sneak up on me? And me with a client tonight? Maybe I’ll write it out at work! Shhh!
Oh wow, this looks so good. Even the bean haters in my family will love this….
I love anything with japalenos in it
Cathy,
Can your blog get any better? Yours is the best I have seen. Colorful pictures step by step. Looking forward to more beautiful recepies.
This is a keeper. Thanks, Cathy.
Yup it is that time and I need to think about what to feed my little house of fans this Sunday. They love hot dips so this may be a good one for us. Love all the beautiful photos!
Yum, yum! I almost posted a Black Bean dip today.
Is it possible that this is just about the best sounding dip ever. I love black beans more than anything. Thank you for this, I’m going to make it for a party I’m attending tonight. Thanks.
We aren’t even football people and I’m feeling the urge to throw a Superbowl party just to use all your yummy recipes.
This one looks so incredible and cannot wait to make it not only this weekend but pretty much many weekends to come!!
This dip looks just delicious – I like the jalapenos in it!
Black bean dip is the way to go for a party! We second this all the way. Especially with mayo!
Easy, perfect and delicious—so well suited to serving at any Super Bowl party.
Oh Dear! This would be a dish I couldn’t possibly resist. Did I mention that I’m also a Bean Ho? Mmmmm…
Yum! I love black beans and I love jalapenos, so this is right up my alley.
i love black beans. i love fire in my mouth. i love jack cheese. this dip would permanently distract me from any and every football game.
That looks fabulous. And I have been needing some good dips…
The only problem with this dip is…I would eat the whole bowl. It looks fantastic Cathy.
Oh my goodness, my 8 year old is going to LOVE this. Thanks.
Am I too indulgent to be thinking it’d be fun to dole out personal portions/containers and serve for dinner on non-Superbowl Sundays?
YUMMY!
It looks great…I’d have to use a lot less jalapeno cause I’m a huge weenie.
Oh man does that look good!
Yum…Cathy, this dip looks great-and I think I have everything in the house to make it! Your chick peas recipe is one that I’ll be making for the game…this very well could be the other one-I’ll have one happy husband for sure….
Oh……my gosh. This looks so scrumptious. I love love black beans, and I think I absolutely must make this. I can’t usually hack jalapenos though….maybe a little Rotel would work as a replacement….
Oh……my gosh. This looks so scrumptious. I love love black beans, and I think I absolutely must make this. I can’t usually hack jalapenos though….maybe a little Rotel would work as a replacement….
Ooo that’s a nice looking dip…a great change from the usual looking bean dips
I could drink this for breakfast. Yum.
chalk up another on I have to make – I too love black beans.
I can’t wait to see the winning recipe!
I would have to make two batches of this dip. One for me and one for everyone else!
Jeez, I think that I’ve been getting fatter just reading about your Superbowl recipes – all of which look lip smackingly tummy-rumblingly good! Black bean dip is so full of fibre and wonderful things, but the color sometimes throws people off…I love that you solved that problem by smothering it in cheese and pretty garnishes!! Great job, as always.
(and will you save me a seat on your couch come game day?)
that’s an individual serving right? LOL juuuuust for me, thank you!
Great photos. You make that bean dip look extremely festive. Maybe I can manage to get excited about the Super Bowl yet!
I don’t watch the Super Bowl, but I’m making this!
Black beans, peppers and cheese? Oh, yeah!
grrrr. You need a serious warning on your site. WARNING! More calories are about to be consumed. Not fair. Looks delicious.
This was my dinner tonight … well, I had to test it … before the game, you know. It’s a winner!
My daughter has requested a Mexican feast for her 16th birthday party this week. This will make a wonderful appetizer!
Thanks again for a fun contest, Cathy. I’m not a big football fan, but I love the food.
This looks like a delicious variation on the classic bean dip!
Oh yeah this is a good one! I have to make this for Sunday!
You had me at Black Beans. I love beans…all beans, with the exception of Lima Beans, but Black Beans, *sigh* be still my heart.
With all this awesome stuff you’re featuring, I just may have to watch the Superbowl afterall…just so I have something to do whilst I’m stuffing all this yummy goodness down my throat!
This is such a great recipe. Getting ready for the big event.
I love bean dip. This one looks fantastic!
Healthy schmealthy, I’m just wowed by how delish it looks with all that melted cheese on top!

Love this dip!
Delicious dip Cathy. Perfect for the game indeed.
Cheers,

Oh … yummy, nummy, yummy dip! I’m doing a happy dance looking at it. Plus, it’s gluten free … yippee! My dishwasher was delivered today! I had the guy double check all the lines and run it while he was here to make sure everything was hooked up right! I kept envisioning your floor!
It looks so good–I’m always a sucker for Tex Mex.
Yuuum! I am going to make this for the guys this weekend.
What a wonderful blog! Your collection of recipes is mouth watering and your pictorial instructions are delectable! I’m heading for the kitchen right now!
yum! we love black bean dip!
So gooey and good. Yum!
BIG TIME yummmm!! Good one for Super Bowl
This dip sounds really good. Except for the Super Bowl party I’m going to bring Bacon Guacamole and, ahem, someones Nutella-Peanut Butter Brownies!
I adore bean dips, and this one sounds like it would be right up my alley! I don’t care much about football, but I’d watch the game for a chance at some of that.
Cool, now I have a black bean chili and a black bean dip.
I’m partial to black beans, in case I wasn’t being obvious. Plus, when you add the word “jalapeno” to the mix, I’m all about it.
This looks delicious and so easy to make. Can you sub in another kind of cheese? I’d like to use up what I have at home and I don’t have any Montery Jack. I do have brie, blue cheese, raw goat milk cheese, and sharp cheddar… would any of these go?
I love me some back beans!
And this looks like a great alternative to Salsa!!
I love anything with that much cheese.
I made this for superbowl today…. most said it could be spicier… maybe 2 jalapenos…. something…
but all loved it…
It’s in the oven as I type. My taste buds are plastered up against the oven window just waiting!
