This is what went to the 1st grade Halloween Party today, Googly Eyed Cupcakes. My little guy couldn't have been more excited helping me decorate them. Ironically, his cupcake was totally left plain; no frosting, no eyes, no candy; he's very particular.
There is no recipe for these cupcakes, I used a boxed cake mix. Gasp! I sliced the top of these before frosting them to make them more flat. I then cut the gummi eye balls in half so they would they lay flat as well.
I sliced gummi fish into strips for the mouth and halved baby marshmallows for teeth. These are a cinch to put together and my little hooligan could not wait to take these to school. He was very proud.

A Halloween yard sign. I love the green-marbled eyes for both the witch and the cat, as well as the goofy grins.

Cool cupcakes. Really cute yard sign too.
You are like the coolest mom, EVER!
Any kid would be proud to present those at school–they’re going to be a huge hit!!
I have a “thing” for eyeballs–so those are right up my alley!!
A girl’s gotta do what a girl’s gotta do. I think they are awesome cupcakes and will make all those wonderous eyes of the first graders squeal with joy.
How cute. Love the yard sign too.
Marlene
P.S.those lemon muffins are the BOMB!!!
I laughed out loud as soon as I saw the photo of the cupcakes. Bravo!
Those cupcakes are adorably spooky! My youngest is in middle school now, so I won’t be making those things for class anymore.
Maybe I need to adopt a class, just for Halloween.
Love the cat/witch Halloween sign.
It’s almost here! Do you have any plans for Halloween night? Or maybe, we’ll hear about it Nov. 1.
Those sure are scary, but they sure look yummy!
I love cupcakes. And I love how you go ALL OUT for Halloween!
SO cute. Great Mom you are. My son’s 2nd grade teacher didn’t want any food in her classroom for the Halloween party. Isn’t that Horrible??? She apparently was afraid of ants.
Does your family realize they have a genius for a Mom? I hope they love Halloween as much as you do, lol. I wish I’d known you when my kids were small but I think you were still making mud pies back then.
I love googly-eyes on anything! So cool! I can see why your son was so excited to take them to school!
Fun Cupcakes! I saw those gummy eyes at Wally World and wondered what to do with them. Now I know!
How clever AND adorable! I kind of miss those days when my daughter was young and I made treats like this for her class.
Those cupcakes rock! And I love that your son had to have his plain…that is too funny!
Cupcakes children will love! And they won’t care one whit it’s a box mix!
Love the cupcakes! So cute, and seems to be fairly easy to make! Good idea, I’ll have to try it for our office halloween party soon!
Thanks for sharing!
Love the cupcakes! What kid wouldn’t?!
I loved the yard sign, Cathy ! You find the most creative things
OK so those are too DAMN cute – I love these – I need kids so that I can play and make cute things like this!!!
Cake Mix???? So you are somewhat human, after all;)
Too cute! I’m already going through withdrawals with just the thought having to wait another whole 11 months until your delightful Halloween theme returns.
Funny, I was thinking the other day… I’ll bet your boys have never had any food from a box…. ever. Okay, but still so much work went into these. So darn cute! Lucky class!
Now we get to see all your decorations on the outside! Nice.
What great cupcakes for the little hooligan to take to school!
LOVE THEM! I’m doing something similar, but not nearly as cute and decorated. I am doing pumpkin cupcakes with cream cheese icing and just putting an eyeball on top. Yours are way cuter!
That’s a perfect treat for little ones! I love them!
Any kid would be proud. You are so creative.
You put all of us, frosting-and-sprinkles moms to shame
Love those..they are PERFECT.
(They also have gummy eyeballs at World Market in case someone doesn’t have a membership to Costco.)
I told my 7th graders about your kitty litter cake so today I promised I would show them on my computer what it looks like.
Did you know you would be part of a middle school moment when you may that creation?
It’s right up their alley.
Awesome and gruesome all at the same time!!!
Absolutely adorable! I hope the rest of the class loves them, and your son, though his cupcake is plain, will be proud that he helped make them.
Boxed cake mix? Unforgivable! Good thing the eyeballs more than make up for it. Those balls look pretty realistic, it seems like.
Soooo Cute! And those eye balls look so real.
I really like the “Happy Halloween” yard sign.
So cute and fun. We are making something similar today for a Halloween party tomorrow. Great recipe.
Those are very cute and he will always remember what you do with/for him. I love how his was plain. Funny.
Cool cupcakes…I bet all the other mom were envious!!
Very cute! Did you save those cut off cupcake tops for me?
Those are too cool! Lucky guy, he can still bring in cupcakes, homemade at that! to school. The kids’ school says no to fattening foods. Well, except for all that pizza they serve for lunch. Yeah.
OMG, those are amazing.
I agree, you are the coolest Mom ever. These rock!
Cupcakes without frosting are the BEST.
GREAT CUPCAKES! Wow – I am sure it was the hit of the entire class.
Totally cute cupcakes! Perfect for evil little Halloween monsters (and hungry big monsters).
Your kids are lucky to have you as a mom! How cool was he today? I bet if a poll was taken for the best mom in the classroom you’d get it!
We’ve got those same gummy eyes and I cannot wait to use them tomorrow night! I froze them in ice cube trays and am planning to add them to everyone’s drink, alcoholic and non-alcoholic alike!
I just wanted to let you know that I have now made two of your recipes. I made your stuffed mushrooms last summer and they were a hit. Two nights ago I made your chicken 123. Rarely do I make something that everyone in my family will like. Great chicken!!!!! I will definitely make it again ( mostly because the chinese five spice was difficut to find and then it was rather pricy) Just wanted to thank you for 2 great recipes.
Very cute! I can imagine the kids would absolutely adore these cupcakes (as an adult I do too)
Those cupcakes are awesome! I don’t blame your little guy for being proud!
You make this fun to follow for the whole month. I can hardly wait for tomorrow. You know the pressure is on. When do you sleep? The cupcakes remind me of little aliens, love them.
NORDSTROMS!!!! My favorite store! ARGHHH there is no Nordstroms out here in the south. I need to come to California. Lucy and I loved Nordy’s we both looked like a million bucks when our closets were stocked from there. EXACTLY.
I bet your little guy (and his mom!) were very popular today!
Do you get all dressed up to give out candy to trick or treaters Cathy?? As much as you love Halloween I can totally see you doing that and loving every minute of it!!
There was a bunch of slicing going on in the making of those cupcakes! VERY spooky!
You are soooooo Awesome!!!
These are fantastic!!
Have you thought of publishing a cookbook? I’d buy the first 10 copies for sure!
You are so brilliant! I love these cupcakes. Have a fabulous Halloween! I know you’ll enjoy every minute.
I can see these cupcakes would be the hit at any Halloween get together, but I do think it is funny your son wants his plain! This is going to be a great weekend for you and yours, with all the decorating and holiday treats….will you be posting pictures of you all dressed up for the festivities ?
What fun cupcakes. I just took some out of the oven for my ist grader tomorrow but I am not as creative as you.
Those are awesome cupcakes! I have a no apologies policy regarding cake mixes. There are times when they are perfect for the project at hand.
You are awesome. It’s always interesting coming here! Your son is adorable, too.
creeeeepy eyeballs. i prefer my fake body parts to look a little less real.
Cathy- All those Halloween decorations and treats, you are the best mommy EVER! Well that and a little kid wrapped in a woman’s body
Those are so cute! I’m with your son, I love looking at decorated desserts but pick it all off before eating.
Aww! Adorable!
I wish I had a first grade party to go to, if that’s the kinda treats being served.
i want some gummy eyeballs! These are so fun!
Those cupcakes are just awful. And that’s good!
I’m sure the kids loved them. Your kid must have been sooooo proud!
So, really…how many storage rooms does it take to store your Halloween goodies?
Great eye moster cupcakes!
Damn, those eyes look tasty!
